Ingredients

  1. Large Eggs – 4
  2. Large Onion – 1 (finely chopped)
  3. Grated coconut – ½ cup
  4. Grated ginger – 1 tsp
  5. Flakes garlic – 2 tsp
  6. Basmathi rice(washed) – 2 cups
  7. Cinnamon stick – 1 inch
  8. Cardamom – 2 nos
  9. 2 bay leaves
  10. Turmeric powder – ½ tsp
  11. Water – 3 cups
  12. Cumin seeds – 2 tsp
  13. ½ cup ghee / oil

 

 

 

 

Preparation

  1. Heat the oil / ghee in a pan and fry onions and garlic together with the bay leaves.
  2. Grind the onions and chilli with the coconut  gratings, ginger and garlic, tumeric powder and coriander powder.
  3. Prick the eggs with a fork and add to the pan.
  4. Fry for 4 minute and then carefully add the ground paste and allow it to cook.
  5. Add the rice and just 3 sec wait and then add water, mix well. Then 15 minute or until the rice is done.
  6. Boil the eggs separately and cut into rings.Arrange the corners of a dish and add the rice in the center.
  7. Sprinkle garam masala powder over it.

Palada Pradhaman

Pradhaman is a traditional Kerala dessert.

Ingredients:

Water                                           :              1  1/2 cup

Milk                                              :              3 cup

Condensed Milk                      :               1 cup

Butter                                          :              2 tbsp

Ada                                               :               ¼ cup

Sugar                                            :               ½ cup

Method:

1.Clean the pressure cooker properly.

2. Boil ada by putting it in 2 to 3 cup boiling water.Keep it covered for 25 minutes.wet water completely.

3.Heat butter in a pan and fry ada to a light pink colour.Keep it aside.

4.Boil milk and water in a thick bottam pan.Add boiled ada and reduce heat to low medium while stirring all the time.

  • Keep stirring till milk is reduced by 2/4rd.
  • It takes about 2 hours to prepare the dish and now,the color of pradaman should be of pink color .
  • Add condensed milk and cook for 4-8 minutes more.
  • Add sugar and mix it well

5.Serve it hot or cold as desired.

Chakka Pradhaman recipes

Chakka Pradhaman is a traditional kerala recipes.

Ingredients:

Jack fruit halwa(Chakka Varattiyathu) – 2 Cups
Cocnut milk – 2Cups
Jaggery – 1Cups
Cardamom powder – 1/2tsp
Ghee – 2tbp
Cashews and raisins – 2tsp
Coconuts bits ( thenga kothu ) – 1tbsp
Salt-a pinch

Method of Preparing Chakka pradhaman:

1.Stream the jack fruit halwa and puree it into a fine paste.
2.In a pan take a tsp of gheee and pour in the jack fruit paste along with just a little water if the puree is to thick.
3.In a vessel,boil the jaggery along with 1/4 cup of water till it melts.
4.Transfer the jaggery syrup to the cooked jack fruit pulp and let it all boil on medium flame for ten minutes.
5.Add 2nd coconut milk and keep stirring. Cook for another 8—10 minutes on low flame.Do not let it boil after the coconut milk is added,it will start separting.
6.Add ghee into the pradhamanm and keep stirring. Turn off the stove when the mixture starts thickening.
7.last step add the milk and mix well.

pradhaman is ready to eat,serve hot or chilled.

Ingredients:

  • Tomato                                               –    3
  • onion                                                   –    2
  • long piece ginger                            –   1/2″
  • Green chilly                                      –    2
  • Cup mava                                           –    1/2
  • cup cream                                          –   1/2
  • Red chilli powder                           –    1/2 tsp
  • Turmeric                                            –    1/2 tsp
  •  Garam masala                                 –    1/2 tsp
  • Clarrified butter                               –   1 tsp

        Method:

  • Cut panner i square pieces.
  • Grind onion , ginger , green chilly .
  • Grate mava.
  • Heat clarified butter (ghee) in a pan.
  • Add onion , tomato  paste.
  • Continue cooking it on medium flame till ghee/oil begins to separate.
  • Add mava, cream .
  • Simmer for 2 minutes.
  • Add salt, red chili powder , turmeric, garam masala.
  • Add cottage cheese  pieceswith 1/4 cup of water
  • When the gravy thickens put off the flame.
  • Take off the fire and serve hot.

Hot Prawn Fry

Ingredients:

Prawn – 1 kg
Red Chilli – 2
Big Onion – 2 small size
Curry leaves – 4 leaves
Ginger – Garlic paste – 1 tbsp
Tomato – 1 small size
Turmeric Powder – 3 pinches
Chilli Powder – 1 tsp
Water – 2 cup
Oil – 3 tbsp

Method:

 First heat oil in a pan.
Then Add red chilli and fry for   30   seconds.
Add onion, curry leaves and fry till the onion turns golden brown.
Add Ginger-Garlic paste and fry till the raw smell goes and the colour of the paste turns light brown in colour.
Add tomato and fry till it is cooked.
Add Turmeric Powder, Chilli powder and fry for 2 minutes.
Add the prawn and fry for 2 minutes.
Add water, salt and allow it to boil for 2 minutes.
Close the pan, lower the flame and allow the prawn to get cooked.
Stir it after 3-4 minutes.
Check if the prawn is cooked by cutting it using a spoon. Prawn will take less time to get cooked.
If it is cooked, fry till the gravy thickens.
Salt – 1/2 tsp

Mutton Fry

Ingredients:
Mutton                             –  1 kg
Oil or ghee                       –  4 tbsp
Curry leaves                   –  1 branch
Onion                                 –  1 1/2 medium size
Red chilli                          –  5
Chilli Powder                 –  1 tbsp
Ginger                               –   Garlic paste – 2 1/2tbsp
Salt                                     –  1 tsp
Water to cook meat     –  2 to 3 cups.

Method:

Heat ghee in a pressure cooker.
Add Red Chilli and let it’s colour change lightly. We should not allow it to turn black.
Add Onion, curry leaves and fry till onion turns golden brown.
Add Ginger-Garlic paste and fry till it turns light brown in colour.
Add chilli powder and fry for 20 seconds.
Add mutton, salt and water.
Close the pan and let 7 – 8 whistles to come.
Open the pan and fry till no moisture is left.

                                                                                                                        Fish curry

Ingredients:

1.  Fish                                    –  1 kg
2.  Onion 2                            –  finely chopped
3.  Tomato                            –  1  finely chopped
4.  Chilli powder                –  2  tsp
5.  Coriander powder       –  2 tsp
6.  Turmeric powder         –  1 tsp
7.  Curry leaves                  –  1 spring
8.  Mustard seeds               –  1 1/2 tsp
9. Fenugreek seeds            –  ½ tsp
10. Garlic flakes                  –  4 (optional)
11. Oil                                      –  4 tbsp
12. Salt                                   –  to taste

13.Gambooge                       –  3 num

Preparation:

Take a kadai and heat with oil.

Add mustard seeds.

When they start to crackle add fenugreek, garlic flakes and         curry leaves.

Then add chopped onions.

Fry on medium flame until they turn into golden yellow colour.

Add chopped tomatoes and salt.

Fry until the oil separates from the mixture.

Now add chilli powder, coriander powder and turmeric powder.

 Fry for few seconds.

 Then add tamarind extract.

Combine well.

Now reduce the flame and cook for 10 mins.

Then add the fish pieces and allow boiling for another 10 mins or your desired consistency.

Remove from the heat.

Serve with plain white rice.

Tandoori Chicken

Ingredients

Large Chicken pieces      –  8 num
Yogurt                                   –  11/4 cup
Lime Juice                           –  2 tbs
Chopped Onion                –  ½ quantity
Dried Red Chillies            –  3-4
Coriander Seeds               –  2 tsp
Crushed Garlic                   –  2 cloves
Grated Ginger                    –  1″ piece
Clove                                     –  1-2
Garam Masala                    –  2 tsp
Chilli powder                    –  2 tsp
Salt to taste

Tandoori_Chicken

Method

Wash chicken pieces and rub lime juice and salt over them. Keep aside for half an hour.
Grind dried chillies, ginger, garlic, coriander seeds and clove together. Mix the paste with garam masala and chilli powder.
Heat a pan and sauté the masala. Add onions and fry. Pour yogurt and stir well. Remove the pan from fire.
Arrange chicken pieces in a dish and pour over the yogurt mixture. Refrigerate the marinade overnight or at least for 4-6 hours.
Arrange the chicken on a broiler tray cook it in a pre-heated oven for 20-30 minutes or brush oil over the chicken pieces and cook in a gas stove turning over till both sides are done.
Keep pouring oil and masala over the chicken pieces in between.
